The best-looking fish in the sea - its name perfectly suiting its appearance. A kaleidoscope of greens, blues and purples, it has large scales, each with contrasting coloured edges - if Versace designed fish, they would probably look like this! They are found in the Pacific, Atlantic off the coast of Africa, Red Sea and the Mediterranean, and range in size from 450g to 2kg. As for the flesh, it’s firm and delicate. Cook as per Snappers or Sea Breams. Larger fish (1kg+) can be filleted, but best to stick to smaller, portion sized whole fish, which must be scaled.
