With wild Sea Bass being rated unsustainable, now is a good time to look for alternatives and these fit the bill perfectly. A lot of thought has gone into rearing these beautiful Danish fish in conditions that are as close to natural as possible.

From a smokery where grading, filleting, curing and cutting are still mostly done by hand, comes this stunning hot Smoked Salmon. The hot smoking process gives a distinctive texture and flavour, as the heat from the aromatic whiskey and calvados barrel chippings gently cooks the side as it’s smoking.

Technically a different species, these beauties are tastier than their US counterparts. They are cultivated in the North Pacific Ocean on ropes and nets which means they don’t touch the seabed and pick up grit.

In season and at its best from June to August. Our Grey Mullet is caught by Paul Wenham, skipper of the Ellie Jean. He uses ring nets to land sustainable numbers of fish. Every fish arrives with us within hours of being landed.

Caught off the coast of Scotland or gill-netted in Cornish waters. With a delicate texture and mild flavour. It’s a real treat to pan fry, deep-fry or bake.

With a lovely firm white flesh, this is a great alternative to wild Sea Bass. Those not in the know sometimes sell it as ‘Stone Bass’, but it’s not, so don’t get caught out.
