Mother's Day Menu Inspirations

Our Development Chef, Jason, has come up trumps again putting together some cracking fish and seafood dishes worthy of a spot on your specials board. From simple grilled Prawn salad and fish tacos to Japanese-spiced Salmon and crispy roasted Scottish Trout - everyone will find here some inspiration for their Mother's Day menu.

Queen Scallop Bruschetta with Tomato & Fennel Dressing

These marinated Queen Scallops need very little prep as they already come pre-mixed with candied tomatoes, spinach & olive oil. Just saute, add some pickled fennel & cherry tomatoes, then arrange over some grilled sourdough, drizzle with the pan juices & herb oil, and top with micro fennel. Easy.

Baja Fish Tacos with Guacamole, Sweet & Sour Onions & Chipotle

Top corn tortillas with guacamole & chipotle slaw, add sliced crispy fried Lightly Battered MSC Cod Goujons (available on Splash promotion) or Tempura MSC Hoki Strips, then garnish with sweet & sour pickled onions, pea shoots & coriander.

Grilled Prawn Skewers Caesar Salad

Our raw, peeled & deveined King Prawns are made for this dish. With delicate tender texture and a sweet taste, they come fully prepped & ready to cook so you only need to marinate them with paprika & lemon before grilling on a skewer. Yum.

Japanese-spiced Salmon & Rice Salad with Edamame & Sesame

This is a fancy play on a trendy poke bowl: simply dust a Salmon portion (for example skinless & boneless MSC Pink Salmon) with Japanese togarashi spice blend then bake. In the meantime season cooked sushi rice with soy, sesame & rice vinegar then top with crispy leaves, radish slices & Asian daikon pickles, drizzle with soy & yuzu dressing then top with coriander.

Smoked Salmon Slices with Fresh Pickles & Shallots

Simply arrange slices of the smoked Salmon of your choice on a plate, top with salad leaves, capers & shallot rings - why not also add some of our fresh pickled cucumber or fennel? Roasted Loch Reared Trout with Pommes Anna, Samphire & Seaweed

Loch reared Scottish Trout is a great alternative to farmed Salmon - and we have 2-3kg whole fresh fish on promotion in March. Here a Trout portion has been roasted to get a super crispy skin, then served with grilled spring onions, Anna potatoes, samphire grass & a drizzle of salsa verde made with seaweed.

Roasted Hake Suprême with Thai Spices, Coconut & Coriander

Here's a top-notch Mother's Day main course: roast a fresh Hake supreme until the skin is crispy & golden, then serve with an aromatic red Thai sauce garnished with crispy fried garlic shallots & chillies.

Hot Smoked Salmon & Pea Salad, Watercress & Horseradish Cream

Take your favourite crispy salad leaves, peas & watercress, then top with our superb hot smoked Salmon - you can get it eaither as a whole side or 100g portions. Drizzle with a dressing made of creme fraîche, freshly grated horseradish, lemon & olive oil.
