A very large fish, growing as large as 300kg, though at this size the meat isn’t as good quality.
Loins up to 3kg are ideal.
There are different varieties of Marlin - Black, Blue, White and Striped, though they are all fairly similar.
Has a taste and texture similar to Swordfish, and offers a great point of difference on menus.
