From the family of Snake Mackerels, Escolar are long and slender, with dark browny-grey skin and can grow up to 130cm.
Needs careful cooking, and never use the cooking liquor as it contains waxy-oils, which act as a powerful laxative!
The flavour is rich and oily, so it needs flavours such as lime and coriander to cut through, but avoid creamy sauces.
